I found Aux Terrasses in Tournus entirely by accident. A string of Google searches, reviews in various online papers (the ones with reasonable travel sections), Tablet Guide, Michelin Guide and it made it to the top of the list. Offering a smart hotel (read the review here), a charming Michelin-starred restaurant (that offers an exceptional dining experience) and located in the picturesque village of Tournus in Burgundy, France. Perfect.
Of course it is not new, Aux Terrasses (a family-run establishment) has been delighting guests with its innovative cuisine and warm hospitality since 1979. But the style is fresh, the enthusiasm that all of the staff seem to have is a venue that is new and hitting its perfect pitch.
THE AMBIANCE >
The restaurant’s interior strikes a perfect balance between rustic charm and modern elegance. Exposed stone walls and large untreated solid oak tables create a welcoming atmosphere, while floor-to-ceiling windows flood the space with natural light.
There is a lot of expressive art, sculpture and stylish decoration and the wabi sabi nature of the design just works comfortably chaotic, stylishly cosy. A favourite touch from our point of view was the use of vintage airline trolleys to serve Champagne, Spirits and Cheese (the PanAm one was the stand out).
Then there is the view through the glass to the peaceful courtyard garden which I am sure would be a fantastic place in Spring and Summer but it was just a bit damp and cold for us in late Autumn/Fall (we will just have to go back to see).
THE CHEF >
Jean-Michel Carrette, the talented chef behind Aux Terrasses, took over the restaurant from his parents in 2004. Having grown up in the kitchens of this establishment, Jean-Michel trained at catering college in Poligny in the Jura before honing his skills at renowned restaurants including La Tour Rose in Lyon and La Maison Troisgros in Roanne.
He then returned to his roots, taking on the kitchen and ultimately (along with his wife Amandine) the operation of the hotel as well. His passion for cooking and creative approach have allowed him to attain and maintain the Michelin star awarded to the restaurant in 1999.
THE FOOD >
Jean-Michel’s culinary style is described as instinctive and emotionally rich. He focuses on using high-quality, locally-sourced ingredients, with most of the produce coming from organic or sustainable farms within a 50km radius of Tournus. The chef’s commitment to seasonality and daily inspiration results in an ever-changing menu that showcases the best of Burgundian cuisine with a modern twist.
Guests can choose from two very reasonably priced tasting menus:
- A 6-course menu priced at €65 (€130 with wine pairings)
- An 8-course menu priced at €130 (€210 with wine pairings)
These “Carte Blanche” menus allow diners to put their trust in the chef’s creativity and enjoy a surprise selection of dishes. The restaurant is known for its attention to detail, with each course described as a “work of art” that is both visually stunning and delicious.
We were staying for three nights at Aux Terrasses (a village with numerous restaurants, two with Michelin stars) but because the menu changes daily we chose to eat at Aux Terrasses for two nights (in a row) and this review takes account that is quite a remarkable result; to surprise, delight and excite the palate with something special and different deserved an excellent score and thus our rating of 19/20.
There are a number of special amuse bouche starter plates, one that stands out is small local fish fried whole in a beer batter much like white bait (though a little larger) they were delicious with a fresh aioli. One night featured an amazing lobster dish, another night incredible dish with potatoes and caviar. The food is always creative, always making you think but above all the food is incredibly tasty.
THE WINE >
Aux Terrasses boasts an impressive wine list, with a vast selection of wines from the Burgundy region (Bourgogne). While the list is extensive, it’s worth noting that options under €50 may be limited but that is probably not going to be a problem for you.
We started with an aperitif, well actually that is not quite true. Chris and I actually started with a drink at the salon bar which is a delightful space near the reception of the hotel. They have a range of cocktails, spirits, wines and beers available to get you started.
But on to the wine champagne to start (I failed to note what it was but very pleasant) and then on to Volnay 1er Cru – La Pousse d’Or, 2018 (amazing). Chef Jean-Michel recommended we get something a little bigger for the meat dishes and pulled out a Chateau de Fonsale, Côtes du Rhône Reserve 2011 (perfect) as the ideal complement.
CONCLUSION >
Aux Terrasses consistently receives high praise from diners for its exceptional food, attentive service, and comfortable accommodations. If you do a search around for reviews and feedback, many previous restaurant guests describe their meals as “unforgettable” and highlight the restaurant’s ability to provide a Michelin-starred experience without pretension.
For those seeking a truly memorable gastronomic journey in the heart of Burgundy, Aux Terrasses offers a perfect blend of innovative cuisine, warm hospitality, and a commitment to showcasing the best of local ingredients. I can’t wait to go back but next time when it is a little warmer to enjoy the courtyard as well.
