THE WINERY

William Fevre founded the winery in 1957 and the territory includes 12 hectares of premier cru and 16 hectares of grand cru vines. This is not a small Burgundy vineyard with 78 hectares across 90 seperate parcels but there is significant care to the cultivation and harvesting for all of the levels of production.

TASTING

William Fevre Chablis 2020

Fleshy and elegant bouquet revealing citrus, white fruits and flowers aromas. The mouth is fresh, supple underscored by mineral. There is a richness in the mouth that has a solid whack of acid from the lemon, but there is very good length and a lovely complexity. This wine is a relative entry level wine for the house of William Fevre, it still definitely has punch, it is not overwhelming but delicious on a warm day or as a aperitif before dinner, would be fabulous paired with seafood in particular salmon or tuna.

VINIFICATION:

The Grapes are harvested by hand and carefully sorted to select the premium for the best release, a natural gravity flow avoids the need for harsh pumping, an initial pneumatic pressing separates the solids and allows the juice to preserve fine lees that naturally commences the malolactic fermentation.

MATURING

8-10 months in stainless steel vats then old oak before bottling
