It is one of the most famous carnivore restaurants in the world, alongside Peter Luger Steak House in Brooklyn and Vlados Steak House in Richmond, Le Severo is a destination for those who love meat.

Nestled in the 14th arrondissement of Paris, Le Severo has been a meat lover’s haven since 1987. Owned and operated by William Bernet, a former butcher turned restaurateur, this intimate steakhouse offers an authentic Parisian dining experience with a focus on exceptional beef and a stellar wine selection.

AMBIANCE >

Le Severo exudes the charm of a classic Parisian bistro. The small, burgundy-toned dining room features just ten tables, creating an intimate and cozy ambiance. With its crisp white tablecloths, red curtains, and a tiny bustling bar, the restaurant strikes a perfect balance between casual and refined.

When you arrive there is a good chance that William will take you to your seat, this is a place where locals sit with people who have travelled across the world to dine here. Not to suggest that it is uber fancy, it is not. Rather it is just very good at what they do. So good in fact that they also have opened two restaurants in Tokyo (Meguro and Minato-ku).

A great way to begin your meal is with one of Le Severo’s excellent charcuterie options. Standout appetizers include:

  • Croustillant de tête de veau (crispy veal head terrine)
  • Terrine de cochon (pork terrine)
  • Ventrèche de thon (tuna belly)

Of course the star of the show at Le Severo is undoubtedly the beef. Sourced from top-quality producers and expertly aged by Bernet himself, the steaks are served in various cuts:

  • Côte de boeuf (ribeye for two)
  • Filet
  • Bavette
  • Onglet
  • Tartare

All steaks come with crispy, house-made frites and are typically served rare (you would need to be brave to request it any other way).

Complement your steak with:

  • Haricots verts (green beans)
  • Salade de roquette (arugula salad)[3]

Finish your meal with classic French desserts like:

  • Tarte Bourdaloue (pear and almond tart)

We felt like a Burgundy but did not want to drink a whole bottle not a problem a half bottle carafe of a very pleasant pinot noir was quickly at the table.

William Bernet’s passion for meat is evident in every aspect of the restaurant. His expertise in selecting, aging, and preparing beef ensures a top-notch dining experience. The staff is generally warm and welcoming, even to English-speaking patrons.

Le Severo falls into the higher price range for Parisian restaurants, with a meal for two potentially costing around €80. However, the quality of the meat and overall experience justifies the expense.
