It is not an understatement to say people fly around the world to dine at Boragó which is found in the outer suburbs of Santiago. Chef Rodolfo Guzmán opened Boragó in 2006 and since that time has created a restaurant that has been recognised in the top 50 restaurants in the world for the last 8 years going back to its first mention in 2015. It rated 44th in the world in 2023.

The cuisine is all about taking local Chilean ingredients and creating incredible dishes. All the ingredients are grown or foraged from small producers, the vegetables are all grown on the Boragò farm 30 minutes drive from the restaurant.

Eating at Boragò is more than dining out, it is an experience from the first moment you arrive (it is about 15km from the centre of Santiago and will take you 15-25 minutes to get there by car). Located on the (usually dry) Mapocho River and surrounded by tennis courts and sports grounds, it is not the obvious location for a restaurant of such international recognition.

In a building that probably began life as a sports hall or similar you are transformed from the moment you arrive into a place where culinary magic happens.

The meals are all about surprising and delighting the diner, with a matching wine selection that explores the very finest wines from Chile and a constant sense of can I really eat that, you are taken to a magical place where very fine foods are just the beginning of a special night

With 15 dishes (offered some little more than a bite) there was an abundance of flavour and texture. Starting with the ‘Plum Branch’ it move onto Crudo of picoroco, pewen, Chilean hazelenuts and cold pulmay – all I can say is it was delicious. The ‘sea urchin müesli with pumpkin treated as cheese’ was light but so tasty. The ‘roasted flowers a la Van Gogh’ were served with mushrooms cooked in a seaweed bladder, another creative and delightful dining experience.

The larger courses of aged duck and lamb were also sensational and the deserts spectacular. This is a restaurant that it is worth travelling around the world to visit, now when can I go back?
