CAFE > Paramount Coffee Project

When it comes to coffee royalty Mark Dundon of Seven Seeds is pretty close to the top. He started with St Ali in South Melbourne (a coffee roaster, cafe that has grown significantly) and then Seven Seeds a coffee roaster and cafe, Brother Bada Budan, Traveller and the Paramount Coffee Project which has now been one of the best places for a coffee in Sydney for over ten years. The Paramount Coffee Project is a collaboration between Mark Dundon, Jin Ng of Paramount House and Russell Beard of Reuben Hills.

The space which is bright and open delivers the best coffee no matter how you like to drink it and matches it to an excellent range of breakfast items and delicious baked goods. In 2015, PCP LA opened its doors in West Hollywood.

Paramount Coffee Project or PCP for shorthand is in Commonwealth Street, Surry Hills right on the city fringe an area filled with fine dining options and some smart bars. The coffee is made in a gleaming chrome La Marzocco coffee machine and a huge detailed illustration of Kosciusko Mountains dominates the wall above the bar and catches the eye as you cast about the room

THE COFFEE

The coffees apparently are chosen in blind cuppings for quality and flavour. They also have their our own roasted coffee. Personally I am fond of the pour over brew coffee which is served in robust clay cup and jug reminiscent of sake.

THE FOOD

Baked eggs in a red salsa and tonkatsu sauce with blanched rainbow chard ($24) is very popular as are the scrambled eggs (x3) on sourdough toast ($16.50) with a range of add ons – personally the go to for me is Stracciatella and Chilli Oil (+$7).

There are fried chicken burgers with American cheese, lettuce, pickles and gochujang mac sauce all on a potato bun ($24) and the fried chicken waffle with maple bacon gravy ($27).

This is a place where people sit and work, meet, and watch the world go by.
