Bills is the cafe that made breakfast something more serious for Sydneysiders, originally it was in Liverpool Street Darlinghurst (it opened in 1993). There was a large communal table and for many people it was the first place that they experienced avocado on toast. It was also home to fluffy ricotta pancakes and so many other Bills classics.

After a string of TV appearances, successful cookbooks the cafe scaled to new locations, Bondi, Surry Hills, Double Bay, Japan (where it is a huge hit there are five just in Tokyo), Korea, London and it goes on. It has been hugely successful and the formula is almost the same if you visit the original locations or you drop into Ginza.

For me Bills will always be synonymous with Bondi Beach a place where you can be out for an early morning swim in the surf and then back salty and slightly dripping for great coffee, and fluffy ricotta hotcakes with mango and coconut. Yep. yum.

Bills is a place where you will always find good coffee, fresh food and plenty of smiles much like its late founder Bill Granger.
